Method

  1. Roast the vegetables. Toss the , , , and with a little and . Roast at 425°F until tender and golden, about 25-30 min. Do this ahead, separate from the pot below.

  2. Warm the . Heat all the broth in a separate pot so it's hot when it goes over the . Cold broth slows the start and cooks the rice unevenly.

  3. Cook and . In the pot, heat half the over medium. Cook the onions until soft and golden, about 8-10 min, then add the garlic for 1 min.

  4. Toast the . Add the rice, , , , , , , , and . Stir 1-2 min until the grains are coated and fragrant. Scrape everything into a large bowl.

  5. Coat the pot. Wipe the pot out if anything stuck. Coat the bottom and lower sides with the remaining . This is what lets the pot release cleanly when you flip it.

  6. Arrange the vegetables. Put your prettiest layer down first, because it becomes the top: slices and florets, then and . Press lightly so the layers are snug, not crushed.

  7. Add and . Spoon the spiced rice evenly over the vegetables and tuck in the . Slowly pour the hot broth over. It should cover the rice by about 1 cm. Taste the broth and adjust now; aim slightly under.

  8. Boil and simmer. Bring to a boil over medium-high. Put a heatproof plate directly on the to hold the layers, then cover and drop to low. Cook until the liquid is fully absorbed.

  9. Rest. Take the pot off the heat and leave it covered. Resting firms the structure so it holds together when flipped.

  10. Flip. Remove the lid and plate, and pull out the if you can reach them. Set your largest platter upside-down on the pot, then invert in one confident motion. Let it sit 1-2 min, tap the pot, and lift straight up.

A successful flip holds loosely, with a few grains falling at the base.

Nutrition

Variations

  • For protein, sear 1 lb chicken thighs per 1x and tuck them into the vegetable layer before adding the rice, with ½ cup more broth.

Notes

Pot size: 1x fits a 4-qt pot, 2x fills an 8-qt pot to about 70%, and 3x wants a 12-qt stockpot. Keep the uncooked rice and broth at about 70% of the pot so it doesn't boil over; the vegetables are already cooked and won't swell. Salt: the listed amount is a starting point for fine salt. If your broth is salted, use less. If you use Diamond Crystal kosher salt, use about double. Serve with plain yogurt or a cucumber-yogurt salad.
